Samosa Recipe: Steps

1. Begin by mixing flour and salt in a large bowl. Add a little bit of ghee or oil and mix it well. You can slowly add water and knead it into a stiff dough. Cover it with a damp cloth and let it rest for the next 30 minutes.

2. Turn on the stove and boil the potatoes and peas till properly done. Mash them lightly and set aside.

3. In a pan, heat oil and add cumin seeds, fennel seeds, chopped ginger, and green chilli and sauté for a few seconds.

4. Next, add the mashed potatoes, green peas, and all the spices and salt as required. Mix well and add the chopped coriander leaves.

After the stuffing is prepared, let’s come to the next part.

5. Divide the flour dough into small equal parts.

6. Lightly grease the rolling surface with some oil and roll the dough into slightly thick circular discs.

7. Cut the disc into two parts, making a semicircle.

8. Take one part and apply water on the straight edges. Bring the two corners together to form a cone-like structure.

9. Add 2-3 tablespoons of filling inside the cone and press it lightly.

10. Add water to the edges and seal them, making sure that there are no gaps.

11. Continue the same process with the rest of the dough and filling.

12. Next, in a pan, heat oil and start frying the samosas in batches on low heat.

12. Don’t flip them for the first 5 to 6 minutes. Once they start to firm up, increase the heat to medium and carefully flip them.

While frying samosas in oil is the traditional way of doing it, one can also go for air-frying or bake them for a healthy alternative.
