Sindhi fish curry is a unique dish made with pan-fried fish, coriander leaf paste, garlic, green chillies and tomato puree. Ingredients required for making the fish curry-

1) 6-7 pieces of clarified butter (ghee)

2) chopped green chillies

3) 3-4 cloves of finely chopped garlic

4) 2 pureed tomatoes

5) teaspoon of red chilli powder

6) teaspoon of coriander powder

7) 1/2 teaspoon of turmeric powder

8) 3 tablespoons of cooking oil

9) Water (as needed)

10) 1 cup of fresh coriander leaves

11) Salt

This fish, which goes by various names like Rajameen, Seermeen, and Raja Mackerel, should be thoroughly washed and then coated with a mixture of salt, red chilli powder, turmeric, and oil.

Marinate the fish for an hour. Then, blend coriander leaves, green chillies, and garlic cloves to form a smooth paste. Heat oil in a pan and shallow fry the marinated fish pieces.

In another pan, heat the oil and add the coriander paste. Cook for a few minutes, then add coriander powder, red chilli powder, salt, and tomato puree. Add more water if needed and cook until the gravy comes to a boil. Arrange the fish pieces in a bowl and pour the gravy over them. Garnish with fresh coriander leaves and serve hot.
